Understanding Indian Culinary Traditions is a one-month immersive journey through six interconnected experiences that explore the diversity, logic and cultural foundations of Indian cuisine.

Participants may attend individual
five-day modules or complete the full immersion for a broader understanding of India's culinary landscape.

North India: Landscapes, Communities & Food Traditions

Journey through the wheat fields of Punjab, the desert kitchens of Rajasthan, the mountain valleys of Kashmir and the culinary traditions of Awadh. Discover how landscape, climate and community shape food.

Eastern India: Rivers, Rice & Food Traditions

Western & Central India: Drylands, Trade & Food Traditions

From Gujarati thalis and merchant food cultures to the Konkan coast and Mumbai's culinary crossroads, discover how trade, migration and adaptation shaped the food traditions of Western India.

Southern Peninsula: Rice, Fermentation, Coconut & Food Cultures
