Why This Program Matters

A Five-Day Immersive Culinary Experience
Indian cuisine is often introduced through a handful of iconic dishes—a fragrant biryani, a crisp dosa, a rich curry or freshly baked bread emerging from a hot oven. Yet these familiar dishes represent only a small part of a vast and deeply interconnected culinary world.
India's food traditions have evolved across diverse landscapes, climates and communities. Oils, grains, ingredients and cooking techniques change from region to region, creating remarkable culinary diversity. This five-day experience serves as an introduction to that larger story.
Through cooking, tasting, discussion and shared meals, participants explore the cultural logic that shapes Indian cuisine. Along the way, we examine themes such as food as an expression of place, regional ingredients, culinary migration, fermentation, shared meals and the traditions that continue to influence Indian food today.
The purpose of this program is not merely to teach participants how to cook Indian food. It is to help them understand Indian cuisine.
What Participants Explore
A deep dive into the intellectual journeys, historical contexts, and cultural insights of Indian culinary traditions. Throughout the program, participants are introduced to some of the foundational ideas that shape Indian cuisine. We explore how oils such as coconut oil, mustard oil, sesame oil and ghee influence regional food cultures. We examine the role of rice, wheat and millets in shaping meals and agricultural traditions across the subcontinent.
Participants are introduced to foundational techniques such as tadka, bhuna, fermentation and dum cooking, while also discovering the remarkable diversity of Indian breads, shared meals and banana leaf traditions.
Along the way, we explore how food travels, adapts and evolves through migration, trade and cultural exchange.
