Biryani: A Five-Day Immersive Workshop

THE WORLD OF BIRYANI

Across India and beyond, communities have adapted the biryani to local ingredients, climates, cooking techniques and cultural preferences, creating a remarkable diversity of preparations united by a common culinary logic.

The World of Biryani is a five-day immersive experience that explores this diversity through cooking, observation, discussion and shared meals.

Participants prepare and enjoy five distinct biryani traditions while learning the principles that connect them: rice selection, marination, aromatic architecture, layering, dum cooking, accompaniments and regional identity.

This is not a conventional cooking class.

Participants do not attend simply to collect recipes.

They attend to understand how and why biryanis differ, what makes each tradition unique, and how generations of cooks have refined these preparations over centuries.

WHY THIS PROGRAM MATTERS

The biryani is often treated as a single dish.

In reality, it is a family of culinary traditions shaped by geography, ingredients, trade routes, migration and community memory.

A Hyderabadi Kacchi Biryani, an Awadhi Biryani and a Thalassery Biryani may share a name, but they represent very different ways of thinking about rice, meat, spices and cooking.

By preparing and tasting multiple traditions side by side, participants develop a deeper understanding of what makes a biryani a biryani and why each tradition deserves to be understood on its own terms.

At ACE, we believe that food is more than a collection of recipes.

Every preparation reflects the ingredients, techniques, communities and histories that shaped it.

Participants leave not only with new skills, but with a deeper appreciation of the remarkable diversity contained within a single culinary idea: the biryani.
