Almost every Indian kitchen begins with a familiar sound.

Mustard seeds begin to crackle. Cumin releases its aroma. Curry leaves dance in hot oil. In just a few seconds, an ordinary pan is filled with fragrance and anticipation.

This is tadka—also known as tempering.
