Great culinary traditions begin long before food reaches the kitchen. They begin in the soil, in the hands of farmers, in the rhythm of the seasons and in the relationships that connect people with the food they grow, prepare and share.

A Living Food Ecosystem
One of Auroville's greatest strengths is not simply its farms or its kitchens. It is the relationships that have grown between them over many decades.
Across the community, farmers, gardeners, orchard keepers, seed savers, food producers, community kitchens, retail outlets and volunteers work together to cultivate food in ways that are rooted in sustainability, cooperation and care for the land.
This living food system is one of the reasons ACE was established in Auroville.
For us, it is not simply a source of ingredients. It is an ongoing source of knowledge, experience and inspiration.
Every ingredient has a story long before it becomes a meal.
Cooking begins with understanding.
The quality of a tomato is influenced by the soil in which it grows.
The flavour of a mango reflects its variety, the season and the landscape.
The character of a grain depends on climate, cultivation and careful stewardship over generations.
By connecting with the people who grow food, we begin to understand these relationships more deeply.
ACE hopes to create opportunities for participants to experience food not only in the kitchen but throughout the wider food system that makes every meal possible.

Learning Beyond the Kitchen
Working with the Auroville Food Community
ACE hopes to work alongside the many individuals and organisations that have helped shape Auroville's food culture.
This includes farms, orchards, seed conservation initiatives, Foodlink, community retail outlets such as PTDC and PTPS, artisan food producers, community kitchens and the many people who quietly contribute to the food that reaches our tables each day.
Rather than working independently, ACE hopes to contribute by documenting, celebrating and sharing the remarkable knowledge that already exists within this ecosystem.
Celebrating Seasonal Abundance
Nature rarely produces the same harvest every year.
Some seasons bring an abundance of mangoes.
Others reward us with jackfruit, bananas, herbs or vegetables in quantities that inspire creativity.
ACE sees these moments as opportunities.
Through recipe development, culinary experiences, photography, film and publications, we hope to explore practical, delicious and sustainable ways of making greater use of seasonal and locally grown produce.
Every abundant harvest invites new ideas.

Exploring practical and inspiring ways of using seasonal, locally grown and lesser-known ingredients, while celebrating traditional knowledge and encouraging culinary creativity.
Knowledge Preservation
Recording the experiences of farmers, growers, home cooks, artisans and food producers whose knowledge has often been passed from one generation to the next through practice rather than books.
Educational Experiences
Creating opportunities for participants to connect directly with the people, places and ingredients that shape our food traditions.
