Most culinary programs begin with recipes.
ACE begins with questions.
Why does coconut dominate one region while mustard oil shapes another?
Why do some communities ferment food while others preserve it through drying, roasting or smoking?
Why does the same ingredient taste different when grown in different landscapes?
Why do certain dishes travel across thousands of kilometres while others remain deeply local?
These questions form the starting point of the ACE experience.

At ACE, food is not simply an end in itself.
