Why This Program Matters

The cuisines of Southern India demonstrate how a relatively small group of ingredients can be transformed into an extraordinary diversity of food traditions.

Rice, lentils, coconut, tamarind and spices appear across the region, yet each community adapts them in distinctive ways. Fermentation became a sophisticated response to climate and nutrition. Shared meals evolved into important social traditions. Coastal and inland communities developed entirely different approaches to cooking while drawing from many of the same ingredients.

Through cooking, tasting and discussion, participants explore how food traditions evolve through observation, adaptation and lived experience.

The purpose of this program is not merely to teach Southern Indian food. It is to help participants understand Southern Indian cuisine.
